Share your recipes!

Ok so I thought it would be fun for us to share some of our favorite recipes!

I will share my Buffalo Chicken Chili recipe! This is an original recipe! Thought this up on my own and as far as I know there isn't another like it...I have looked on other recipe sites etc. It is for a big pot...made it for a chili cook off so if you cook it keep in mind the portions are for quite a large pot of chili! =)

Buffalo Chicken Chili

7 boneless skinless chicken thighs
1 onion
1 1/2 bottles Franks Red Hot Buffalo Chicken Wing Sauce
2 large cans of diced tomatoes
1 small can pinto beans
1 1/2 Cups frozen corn
1 Tbsp butter
1 Tbsp Southwestern Chipotle Seasoning
1 cup crumbled Bleu Cheese (optional)


Put chicken thighs in bowl and cover with Bufaalo Wing sauce. Refrigerate and marinate for about 1 hour.

Preheat oven to 375º. Put chicken and sauce in casserole dish and bake chicken until no longer pink. About 30 mins. Remove chicken and let cool.

After chicken is cool to the touch shred chicken. Return chicken to sauce and return to fridge to marinate while preparing chili.

On high in large pot melt butter. Finely chop onion and add to pot. Sautee onions until just turning transparent. Add tomatoes pinto beans corn about 1/2 bottle of Buffalo Wing sauce and Chipotle Seasoning. Heat to a boil and then reduce heat to low. Cover and simmer about 45 mins stirring occasionally. Add shredded chicken and the sauce it is in. Stir and heat through. Serve with crumbled Bleu cheese over top. ENJOY!!!

G'day Nyna,

I love cooking too and am sad to see that this thread hasn't had any replies. As you seem to like chicken, try this recipe - kids and adults love them!

Sesame Chicken Meatballs
From the Australian Women's Weekly

Ingredients
170g single chicken breast fillet, chopped (or use chicken mince)
½ teaspoon fish sauce
½ teaspoon sweet chilli sauce
1 teaspoon lime juice
1 clove garlic, crushed
1 teaspoon shredded basil leaves
2 teaspoons sesame seeds
vegetable oil, for deep frying

Method
Blend or process chicken, sauces, juice, garlic and basil leaves until almost smooth.

Using clean hands, roll rounded teaspoons of chicken mixture into ball; roll ball in sesame seeds. Place on tray; repeat process with remaining mixture.

Deep-fry chicken meatballs, in batches, until cooked through and browned lightly; drain on absorbent paper.

Ice water

A few ice cubes
A glass of partially filled water

Put ice cubes in glass and enjoy!
